Max production per hectare: 70 quintals per hectare
Vinification: the vinification is carried in stainless steel tanks with
the submerged cap system and the maceration of the skins lasts
13 to 17 days. The temperature of fermentation is monitored and
maintained around 28 ° -30 ° C. The malolactic fermentation
takes place at the end the alcoholic fermentation and when the
racking is completed.
Aging: The aging lasts 32 months of which 24 are in large
Slavonian oak casks, 2 months in stainless steel and 6 months in
the bottle for proper development of the product before being
placed on the market.
Tasting notes: powerful, austere and elegant wine. The color
is garnet, the nose is fragrant when young with sensations of rose,
violet and rhubarb that with age evolve into notes of spice, black
pepper and truffle. The mouth is very powerful, balanced and
with a very persistent finish.
Serving suggestions: goes well with meat dishes, spicy and
savory courses, seasoned cheese
